Let’s get MEGA to the BURRITO!

These are my affectionately nicknamed “Mega-Burritos,” and honestly, that is all there's for me within the international proper now.

We are down to the wire earlier than this child makes her arrival, that this – or adjustments of this – is literally all I’ve been eating. DESCRIPTION:
These Vegan Mega-Burritos are crammed with a candy potato, cauliflower, and walnut taco meat filling, plus the standard suspects of avocado, salsa, and a heavy thwap of vegan cashew queso! Versatile, speedy to make, and heavily SO GOOD.

INGREDIENTS:
1 candy potato, chopped (see notes)
1 1/2 cups cauliflower walnut taco meat
1/2 cup water
mashed avocado
salsa
cilantro
large flour tortillas
vegan queso, or cheese (if you’re now not all-out vegan)

INSTRUCTIONS:
Filling: Start along with your candy potatoes in a skillet with a graceful of oil and salt. Saute till fork-tender. Add ready cauliflower walnut taco meat and simply sufficient water to get it watching well and saucy and taco-meaty.
Assemble: Stuff a flour tortilla with mashed avocado, cauliflower walnut filling, salsa, cilantro, and queso or cheese. Roll, wrap, fry in a skillet… no matter matches your fancy. The Mega-Burrito says YOU DO YOU!

NOTES
If you use a candy potato, chop it up small so the items prepare dinner faster! You don’t should use candy potatoes. Try carrots, spinach, bell peppers, mushrooms, zucchini, you title it! The cauliflower walnut meat might be well as a filling in and of itself, so if you’re truly in a rush, you don’t should upload the candy potatoes or any different veggies for that matter. I simply like so as to feature veggies to bulk it up and upload some more nutrition.
